Master the art of this decadent dough in time for Valentine’s day

·      Recipes covered: sweet, stiff starter, enriched babka dough, chocolate filling, cinnamon filling, orange simple syrup, egg wash.

Jensen’s first book, A Baker’s Year, told a tale of baking through a break-up. Love has always been a central theme to her work, as has pleasure through food. Whether you’re falling head over heels or deciding who gets custody of the dog, Valentines Day calls for a decadent baking project. In this 2-hour, live stream class, Jensen will introduce you to Babka, an Eastern European Jewish bread, and showcase how to braid the dough into a loaf or wreath, filled with chocolate or cinnamon. Once you become familiar with the recipe you can put your own twist on it - keeping it sweet or going savory. Whatever you decide, this bread will capture your heart.

 

This workshop is perfect for those looking for a weekend project bake! Tricky enough for the skilled baker, but still strait forward enough for the beginner, the babka is made from Jensen’s classic brioche dough, which is also the start of donuts, cinnamon rolls, and sesame burger buns. In addition to the dough, Jensen will cover how to make a sweet, stiff, leaven, a single stage preferment that goes into the dough. Part principles, part hands on, you’ll walk away with a better understanding of how the dynamics of enriched sourdough work and empowered to try a new and exciting style of leaven. Let’s go!

 How to Participate

This class is “cooking show” style, Jensen will have all parts of the process ready to go. If you’d like to bake along, then you’ll need to be prepared up to the step you’d like to do together. You can always simply watch and ask questions. You will receive a recording the following day.

Jensen is a baker, author, and teacher with over 20 years of professional experience. Jensen has appeared in national magazines such as Bon Appetite, Southern Living and Food & Wine and taught classes for culinary institutions like King Arthur, Milk Street Cooking, and the Bread Baker’s Guild of America.
